La Fortaleza  is a mere 4 hectares big, with only 3 hectares planted with coffee of mostly Bourbon and Sidra (Bourbon and Typica cross) Varieties. Quality is the name of the game for Carmen Gagnay and her family and that focus shows in the resulting cup. For four months out of the year, the coffee is picked ripe and depulped the same day, fermented dry for at least 15 hours. the coffee is then washed until the mucilage is completely removed, and dried in a combination of raised beds and under canopies. Drying takes about 10 days, give or take based on weather conditions. This Bourbon selection is extremely clean and sweet with loads of apple fruit character and a toffee-dessert like sweetness.

We roast and ship orders on Tuesdays and Thursdays.  Orders placed after 8am on Tuesdays and Thursdays will be roasted and shipped on the next roast day.  We provide $5.00 flat rate priority mail with USPS for all orders.
